Rules for breeding acetic essence for conservation

No acetic acid in the kitchen. No dough to cook, no meat to marinate, no vegetable preparations for the winter to make. At the same time, the question often arises: how to dilute the acetic essence to the 3 or 6 percent required by prescription?



Of course, in the store you can immediately buy diluted 9% vinegar. But first, in recipes quite often there is a different concentration. And secondly, in this case, you overpay for the water, which the manufacturer diluted the same 70% essence.

How to dilute acetic essence 100% acetic acid (also called ice) is a product of distillation of fermented juices and wines. An aqueous solution of this acid (70-80%) is called acetic essence, and an acidic liquid with a concentration of 3-15% is a well-known table vinegar.





Sometimes we need the usual 9% vinegar, and only the essence is available or vice versa. In fact, these liquids are interchangeable. You just need to know the right proportions. Below you will find instructions and a list of ingredients that you will need to dilute the acid in water.

We make vinegar from vinegar essence You will need a bowl, a spoon, a measuring glass. Pour seven tablespoons of water into the glass.





Add a tablespoon of vinegar essence.





Stir it. You will get 9% vinegar, which can be poured into a suitable container for further use in the kitchen and in everyday life.





If you need 6% vinegar, add 50 ml of water to the diluted vinegar.





If there is no measuring glass, dilute a tablespoon of the essence in 11 spoons of water.





That's it, 6 percent vinegar is ready. By analogy, you can mix vinegar with any percentage ratio, as in our table.

How to breed a vinegar essence, we have already figured out. Now let’s figure out how much vinegar is needed to replace the 70% essence in the recipe.

For this, we make calculations in the opposite direction. It is also worth considering that you will need to reduce the amount of water in the brine (in a diluted solution there is more water than in a concentrated one).





For example, 9% vinegar consists of 8 parts (1 part essence and 7 parts water). Therefore, to replace 1 tablespoon of the essence, you will first need to add 8 spoons of vinegar, and then take 7 spoons from the liquid specified in the recipe.

For 6% vinegar, it will be 12 parts (1 tablespoon of essence and 11 spoons of water). By analogy, to replace 1 tablespoon of essence, you will first need to add 11 spoons of 6% vinegar, and then reduce the amount of water specified in the recipe by 11 spoons.

If the acetic essence for some reason gets inside the body, it can lead to burns of the mouth, esophagus or stomach. To avoid these unpleasant consequences, it is necessary to use acetic essence only in diluted form and in small quantities, and also to store as far away from children as possible.
