French recipe cutlet in a greasy net

In France, a popular recipe for juicy and spicy minced cutlets (Crepinette), which became possible thanks to one unusual ingredient. The main secret of the dish is in the fat mesh, which we call the oil.



During cooking, the oil does not allow the meat juice to leak out. And along the way, enriches the dish with most of the fat contained in it, moisturizing everything that was wrapped in it.

Recipe for juicy ground cutlets Ingredients
  • 1kg ground meat
  • rosemary
  • 1 tbsp cumin seeds
  • 3 cloves of garlic
  • 1 tbsp fennel seeds
  • 3 sprigs of oregano
  • 1 tbsp chili pepper
  • 1 tbsp paprika
  • 60ml of red wine
  • plumbing
  • 1 tbsp vegetable oil
  • salt and ground black pepper to taste


Preparation
  1. Place the cumin and fennel seeds in a dry pan. Roast it until it smells. Then grind the pestle.


  2. Add fried spices to the mince along with wine, crushed garlic, rosemary, oregano. Sprinkle chili pepper, salt, paprika, black ground pepper.


  3. Stir everything, and then cover it with food film and send it to the refrigerator for an hour, so that the mince is soaked in flavors.


  4. Wash the purchased film in cold water and put on the cutting board.


  5. Form small flat cutlets out of minced meat.
  6. Place each on a piece of fat film.


  7. Wrap the cutlets in film.


  8. Put each on a pan on the side of the seam and roast on an average heat for 5-6 minutes on each side.


  9. Serve with vegetables and greens.
