Scientists advise to eat avocado with carrots

As it turned out, fresh avocado enhances absorption of nutrients, namely vitamin A from carrots and tomatoes.



Researchers from Ohio state University conducted two experiments, during which it became clear that this tropical fruit enhances the absorption and conversion of beta-carotene from vegetables orange. In this case, carrots and tomato sauce. The tests involved 12 men and women. In the first study, fresh avocado used with tomato sauce, in the second experiment tested the absorption of vitamin A from a combination of avocados, carrots.

In the first case, the researchers found that, compared to tomato sauce without avocado, the addition of one fruit (150 g) increases:

  • The absorption of 2.4 times the beta-carotene
  • 4.6 times the conversion of provitamin A (inactive form) to vitamin a (active form)
The researchers found in the second experiment, compared to raw carrots without avocado, the addition of one avocado (150 g) increases:

  • the absorption of beta carotene by 6.6 times
  • Uptake 4.8 times the alpha-carotene
  • 12.6 times the conversion of provitamin A into vitamin A.
