The RECIPE BERRY CAKE Should be:
3 eggs
100 g sugar
100 g flour
1 lemon
40 g of pistachio nuts
6 g baking powder
50 g butter
a pinch of salt
Glaze:
150 g icing sugar
almond petals for decoration
How to cook:
1. Preheat the oven to 180°C.
2. Separate the whites from the yolks.
3. Mix the egg yolks with sugar and beat in the lush resistant foam. Add the ground pistachios and lemon zest.
4. Sift the flour with the baking powder and put into egg yolks with the sugar. Pour in the melted butter. Mix well.
5. Proteins with a pinch of salt beat until stiff peaks.
6. Carefully, piece by piece, stir in the beaten egg whites into the butter-flour mass. At this stage in any case, do not use mixer!
7. Spread half of the dough in the form greased with butter. Arrange berries on them to lay the remaining dough.

9. For glaze, squeeze juice from lemon and combine with powdered sugar. Stir to avoid lumps.
10. Cover the cupcake with frosting and if desired, decorate with almond petals.
