Bruschetta with duck for Breakfast





Ingredients:

ciabatta roasted on coals — 60 g
duck breast — 250 grams
white wine — 2 tbsp
garlic — 2 gr
rosemary — 2 oz
orange zest — 5 g
cloves — 2 gr
thyme — 2 gr
Gorgonzola cheese — 100 g
cream 33% — 50 ml
arugula — 50 g
walnuts — 50 g
nutmeg — 10 grams
salt — 2 g
black pepper powder — 2 gr

Method of preparation:

Marinate the duck breast the day in white wine with added orange peel, garlic, thyme, cloves and rosemary.
Fry the duck until the desired level of readiness.Thinly slice the duck breast.
Blend Gorgonzola and cream.
Place on ciabatta and the resulting mixture on top of arugula.Season with salt, pepper and ground nutmeg. Put the duck slices on top and season walnuts.
