Salmon on a bed of beans and melons
In our area fresh fish you can buy any, but, oddly enough, with all this choice and diversity is most common for husband and children, I buy salmon, so recipes with this fish, I have accumulated quite a lot. Today I want to share with You one of these.
The most interesting element in this dish is melon — our response overseas mango! Sweet, with a fragrant hint: great for salmon. No heavy side dish, but only useful fresh beans.
We need: (1 serving)
Salmon 1 serving
1/2 Cup Lima beans / Lima beans (I used frozen) or edamame
A small piece of melon
1/4 red onion
1 sprig of fresh mint
2 tbsp. lemon juice
1/2 tsp marjoram
Salt and black pepper to taste
Preheat the oven to 175C/350F.
Washed and treated the fish with lemon juice, sprinkle with salt if you want.
Chop the onion, mint, melon into medium size pieces and mix with beans.
Fall asleep marjoram, pepper and salt.
Grease the form of olive oil.
Put there vegetable composition, and over it a fish.
Close foil. Put in oven for 20 minutes.
Ready! Decorate with mint and serve!
