A RECIPE for HOLIDAY ALMOND COOKIES What you need:
(10 cookies)

  • 119 g protein
  • 298 g of sugar
  • 149 g almond flour (almond flour is, frankly, exotic and expensive pleasure, so it can be easily done at home: take about 150 g unpeeled almonds, add to a coffee grinder or blender and grind into a fine grit, perfect – in dust, then weigh)
  • 40 g of wheat flour
  • powdered sugar for sprinkling
How to cook festive macaroons:

1. Chilled protein, sugar and almond flour and beat for 15 minutes on high speed of mixer.

2. Add the flour, carefully stirring the whole mass with a spatula.

3. From pastry bag to isolate on a baking sheet, the laid parchment baking, ten flat cakes. If you don't have a pastry bag, you can carefully transplant the cookies with a spoon, most importantly do it very quickly.

4. Each cookie to achieve the correct splits to sprinkle through a strainer powdered sugar.
