Winter cabbage pie with cinnamon and rosemary aroma
Dinner cake is too high-calorie, too hard, and let grandma bake cakes. Many people think so, and I was no exception until a real winter fairy tale appeared on our table. There was no person in the house who did not remember the New Year this evening. And no wonder: after all, the air was filled with the aroma of cinnamon and rosemary. And all this, imagine, in combination with white cabbage. I would never have believed it would be delicious if I hadn’t tried it myself.
So, for a shape with a diameter of 26 cm, you will need: For the test:
We fill the sifted flour and thoroughly mix the dough. Yes, it will seem that the flour is not enough, but do not give in to the temptation to add more - now is the time to slowly pour the melted oil and continue to mix carefully. The whole process doesn’t take long, five minutes.
Show a drop of patience, and now the dough has already turned into a malleable warm ball, the hands have become clean and pleasantly moisturized (here is the savings on the salon procedure). Cover the dough with a clean towel and leave to rest, and at the same time, rise a little.
Now we can start filling. I will say at once: in my vast kitchen with an abundance of all kinds of pots and cooks, there was not one pan so deep that it could fit all our filling. So I took a thick-bottomed cauldron, and, frankly, he coped perfectly with the role of a deep pan.
Nashed cabbage and onions cut with semi-rings are roasted in vegetable oil. Add salt, sugar, ground black pepper and ... the most important touch, after which your kitchen will begin to give everyone in the Christmas mood - a little cinnamon. True, the combination is not the most usual, but ... having tried once, you will always miss a pinch of cinnamon in any dish with stewed / fried cabbage.
That’s all, the hardest part of the job is behind us. I just have to pick the cake. Divide the dough in half, one part of which roll in a sufficiently thin layer and lay it in an oil-oiled form so that small sides are obtained. Let's put the stuffing out. The main danger at this moment is not to eat half: what kind of cabbage smells!
With the remaining dough, we cover the cake. Here you can show imagination and concoct something original type of spirals from dough, which can be run in a circle, pigtails, maple leaves, classic grille ... Call your children, they will surprise you with their ideas. Don't worry if there's a bit of dough left. I always do. Leave it in the fridge tomorrow. The next day, consider having your homemade pizza ready.
Grease the cake on top with yolk. I may be lubricating too much, but one yolk is never enough, so I add a few spoons of milk and a pinch of turmeric to it - a 100% guarantee of a golden crust. On top is a sprig of rosemary. After ten minutes in the oven, it will make itself felt with a magical aroma, believe me.
180 degrees C, 40 minutes of tedious waiting.
Transfer the cake that breathes with heat on a wooden board and rather call your loved ones: let them rejoice with you, inhaling the tart smell of rosemary, coquettishly interrupted by the tenderness of cinnamon. In the morning, the cold cake will taste even better.
