Red cabbage is traditionally stewed with apples, juniper berries, cranberries.We love this cabbage, but it is always worth trying to do something else.
This time we used ginger – a bit of a surprise ingredient, but a well-made, together with the sweetness of the cabbage.
For 2-4 servings- 1 medium head red cabbage
- 2 large onions
- 1 piece fresh ginger (3 cm)
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tbsp soy sauce
- 1 tbsp sugar (we muscovado)
- 6 peas of black pepper
- 2 sprigs of thyme
- salt
Red cabbage thinly slice, prisolit and set aside.Onion cut into feathers, ginger RUB on a coarse grater.
In skillet, heat olive oil, fry the onion until transparent. Then put in sauce pan red cabbage, ginger, peppercorns and cook on medium heat for 10 minutes. Then add sugar, vinegar, soy sauce, salt to taste and cook another 10 minutes. At the end sprinkle with leaves of fresh thyme.
Vinegar you can substitute lemon juice, but add the need to taste, to find the right balance of sweet and sour. And we used vinegar infused with pepper, espelette that added to the dish light peppery touch to complement a light ginger taste. published
