Sea bass Maltese with watermelon, Basil and mint

Cooking in Malta is very different from the usual methods of cooking. Maltese do not bother mixing too many ingredients. So get a very simple salads, seafood, seasoned only with pepper, herbs and a little lemon.

So simple Maltese recipe is sea bass with watermelon, Basil and mint. The combination of fish and sweet watermelon — a magical taste of Sunny Malta!





Sea bass with watermelon, Basil and mint

1-2 servings

  • a big slice of watermelon, peeled and seeds, cut into pieces
  • olive oil
  • 1/2 lemon
  • sea salt
  • black pepper, crushed in a mortar
  • sea bass — 1 fillet (about 200g)
  • fresh Basil leaves (a small handful)
  • fresh mint leaves




In a large frying pan, heat the olive oil over high heat. Fillet of sea bass fry on each side for 2 minutes (until tender). Cut the fish in half and place on plates. Then season with salt and pepper and drizzle with lemon juice. Sprinkle with Basil and mint.

Lay the watermelon on plates, drizzle with olive oil and a little lemon juice, add salt and pepper to taste. Enjoy!
