INGREDIENTS
Servings: 5-6
4 medium size zucchini
Salt (to draw moisture from the zucchini)
¾ Cup of breadcrumbs
¾ Cup cheddar cheese, grated
2 eggs
1 tablespoon of garlic powder
1 teaspoon pepper

TRAINING
1. Preheat the oven to 400 ° F / 200 ° C.
2. Grate the zucchini into a bowl and salt generously.
3. Allow the zucchini to sit for 20 minutes as the salt pulls moisture.
4. Pour the zucchini on a clean kitchen towel and squeeze over a sink or into a separate bowl.
5. Pour zucchini back into the bowl and add the bread crumbs, cheddar cheese, eggs, garlic powder, and pepper. Mix together until well blended.
6. Take a tablespoon of mixture and roll it into ONE; repeat for the rest of the mix.
7. Place on a greased baking sheet and place in oven for 20 to 25 minutes or until crispy kids.
