RECIPE
INGREDIENTS

2-3 cups of olive oil
⅔ cup balsamic vinegar
2 g agar
3 cups of water

Let's get ready ...

Pour olive oil in a pint glass or carafe middle and put in the freezer for 30 minutes.
Heat the balsamic vinegar in a saucepan over medium heat and add the agar-agar. Bring to a boil while stirring constantly and then immediately remove from heat.
Remove the butter from the freezer.
With the help of a syringe or pipette, make balsamic mixture and slowly begin to fall in cold olive oil.
Using a spoon, transfer balsamic pearls in a bowl filled with water. Give it a good stir to rinse oil pearls. Serve over tomatoes, mozzarella and fresh basil.
