Chanterelles with zucchini and apricots

The unexpected combination of the two most delicate products - chanterelles and zucchini - with apricots gives you bright, colorful, and very fragrant summer dish

Frozen chanterelles here, unfortunately, absolutely no good.




Ingredients:

600 g small chanterelles

2 medium zucchini

200 g apricots

2 medium onions

1 bunch green onions

olive oil

salt, freshly ground black pepper

How to cook:

Step 1

Clean the chanterelles. Slice the zucchini along the thin slices, brush with butter, sprinkle with salt and bake under a hot grill on a lattice of 1 - 2 minutes. on each side, fold rolls.

Step 2

Peel and finely chop the onion. Apricots cut into quarters, remove the seeds.

Step 3

Heat the oil in a deep frying pan, put the onion and cook, stirring, over medium heat for 3 minutes. Stir chanterelles, mix, increase the heat and cook for another 2 minutes.

Add apricots, cover the pan with a lid and simmer for 2 minutes. Remove the lid and cook for another 5 minutes.

Step 4

Season with salt and pepper, sprinkle with chopped green onions.

Arrange zucchini rolls on warmed plates, place the mixture in the frying pan and serve.
