It turns out that not only it is possible, but also necessary! After all, kvass from the flowers of odorous shrub gives a hundred points of head start to the usual lemonade!

Note that inflorescences, bark, branches and even elderberry roots are considered medicinal. Therefore, our grandmothers used elderberry decoctions for colds, flu, angina.



The best time to pick flowers is from late May to early July. So, you still have enough time to prepare healthy and natural kvass.

The ingredients
  • 2 liters of water
  • 10-15 elderflowers
  • 1 lemon
  • 200g sugar
  • 1 tbsp lemon concentrate


Preparation
  1. Pour the clean water into a large pan. Add the sugar. At the same time, so that kvass does not turn out to be too sweet, you can adjust the specified amount to your taste.


  2. Put the pan on the fire and heat until the sugar dissolves completely. Be careful not to bring the water to a boil.
  3. Squeeze the lemon juice in a pot of syrup. Nothing if it gets flesh and bones. The drink will still be filtered.


  4. Now for elderflowers. It is better to collect them away from the roads and do so in dry weather. Preference should be given to fully opened flowers. They have pollen that will replace real yeast and make the drink carbonated.
  5. Cut the flowers off the peduncles. This should be done, as they can add unpleasant notes to the taste of kvass. Make sure there are no insects on the elderberry.
  6. Put the prepared inflorescences in a clean jar.


  7. Send the skin of the extruded lemons there.


  8. Add lemon concentrate to the syrup and pour it into a jar of flowers.


  9. Cover a jar of future kvass gauze. It is not necessary to close it with a lid, since the drink should “breathe”.


  10. Put the jar in a deep bowl and take it out for 4 days in a cool dark place.
  11. Then strain and pour on bottles with tight lids.
  12. Drinking kvass from elderberry tastes better when it is chilled.
