For those of our readers who intend to observe it, we offer a lean, but hearty and very tasty salad of beans and cucumbers. It has no meat or eggs, and for the preparation of mayonnaise uses aquafaba - a thick brine from canned beans or other legumes.



Bean and cucumber salad Ingredients
  • 300g canned beans (1 can)
  • 250g pickles
  • 130g red onion
  • 50g parsley


Ingredients for marinade
  • 1 tsp sugar
  • 0.5 tsp salt
  • 1 tbsp apple cider vinegar
  • 100ml boiling water


Ingredients for mayonnaise from aquafaba
  • 100g aquafaba (contents of 1 can of beans)
  • 150 ml of refined oil
  • 1 tsp mustard
  • 0.5 tsp sugar
  • pinch
  • 1 tbsp lemon juice
  • salt and black pepper to taste


Preparation
  1. Cut the bow with thin feathers.


  2. To make the onion even more juicy and tasty, it must be marinated.
  3. Prepare the marinade. To do this, add sugar, salt and 100 ml of boiling water to the bowl. Stir until the sugar and salt dissolve.
  4. Send the chopped onions to the hot marinade.


  5. Pour the brine from the beans into a separate container. Aquafaba can form a foam very similar to that of egg whites. Therefore, it can be safely used as a substitute for eggs in baking, as well as the basis for dietary mayonnaise. How to do this, we told in a separate article.
  6. Put the beans in the salad.


  7. Cut the pickles in thin circles.


  8. Cut and add parsley to the salad.
  9. Throw pickled onions on the sieve.
  10. Send cucumbers and onions to the salad bowl.


  11. Fill it with aquafaba mayonnaise. It is not so fat, but much tastier and harmless store. And for cooking salads in the post - just the ideal option.
