How to prepare homemade milk sausages

  3. Cover the mince with a lid and send it to the refrigerator for 18-24 hours.
  4. Chilled minced whip in a kitchen processor or blender to an emulsion state, adding water with ice. The temperature of the emulsion in the process should not rise above 10-12 degrees. If the temperature of the emulsion still rose above 12 degrees, stop the process and cool it in the refrigerator.


  5. Add powdered milk to the emulsion and mix the mixture with your hands for 3-5 minutes.
  6. Put the mince in a container to fill the shells.
  7. Wash the finished shell in water and fill it with mince, previously lubricating the press nozzle with vegetable oil.


  8. Torsion or strand the gut with minced meat at a distance of 8-10 cm to get sausages. Make several holes in each sausage with a needle.


  9. Put the sausages in the oven and dry them for an hour at a temperature of 75 degrees. After that, raise the temperature to 80-85 degrees, put a container of boiling water on the lower shelf and prepare sausages for another 1-1.5 hours, monitoring the temperature inside the sausage with a thermometer. In finished sausages, the temperature should reach 67-69 degrees.


  10. Put them in a sink with ice water to cool them, and then dry on the grille. Cooled sausages can be stored in the refrigerator for 2-3 days or sent for long-term storage in the freezer.
