Olive oil is considered one of the most useful products. Despite the fact that it's pretty expensive, many use it for salad dressings and for cooking. Scientists from De Montfort University in England has conducted a number of studies on the effects of olive oil on the human body.
They came to the conclusion that this product is extremely useful only in its raw form. When roasting any vegetable oil generates aldehyde — substance that has a detrimental effect on our body. Excessive consumption of fried foods can lead to the occurrence of tumors, heart disease and cerebrovascular functions.
The authors of the study gave a vivid example: they claim that the fish cooked in vegetable oil (sunflower, corn, olive), contains 200 times more aldehydes than allowed by safety standards.

Why doctors advise not to use vegetable oil for cooking. They propose to replace it with pork fat or lard. Fat contains the monounsaturated fatty compounds which when heated does not emit toxic substances.
Also fat contains polyunsaturated arachidonic acid, which has a number of useful functions: favourably affect the brain, kidneys, heart, and also removes from the blood harmful cholesterol.
