Vyborg pretzel


 
Ingredients (for 6 pretzels):
 - 350g flour
 - 9d yeast
 - 3.5g salt
 - 35g sugar
 - 35g unsalted butter
 - 15g eggs
 - A bag of vanilla
 - 200-250g water.

Half of the flour, water and yeast, knead the brew consistency of sour cream and let it ferment 3.5-4.5 hours. Then knead the dough and let it ferment 1-1.5chasa. Vykatat dough into the reservoir, grease with vegetable oil and put a layer three times. Cut along the seam into six equal strips and pull and twist each strip into a long plait. Close to harness and put on a pretzel on 1-2chasa proofed. Oven 15min at 210-230S. After baking, decorate pretzels lipstick.

Lipstick. Sugar water boil down to a temperature 113-117S (up samples for soft ball), pour a spoonful of vinegar or lemon juice. Cool the syrup to 40C, flavored and whipped into a lipstick. Pour a spoonful of protein in lipstick and mix. Lipstick ready. Typically it is heated to 50-60S before its finish product.
