Onion caviar Ingredients
- 450g onions
- 150g carrots
- 150g apple
- 300 ml of water
- 1 tsp lemon juice
- 2 bay leaves
- 3-4 peas of sweet pepper
- 2 inflorescences of cloves
- ground black pepper
- 3 tbsp vegetable oil
Preparation
- Cut the bow finely. Those to whom the taste of raw onions seems too harsh, can marinate it according to our recipe and use it for making salads. Pickled onions are crispy, sweet, without the smell and bitterness inherent in raw onions.
- Grate carrots on a large grater.
- Peel and grind the apple. Add some lemon juice so it doesn’t get darker.
- Roast the onions in vegetable oil to transparency.
- Add grated carrots and an apple to the onions. Stir it. Unusual, at first glance, the combination of onions and apples can also be found in the recipe for onion salad in Polish, which we introduced to readers earlier.
- Add spices, salt and pour cold water.
- Carcases for 25 minutes on a small heat until the liquid evaporates. Stir periodically.
- If the vegetables are not soft enough, share some water and continue stewing. When the liquid evaporates, remove the bay leaf, pepper peas and cloves.
- Squeeze garlic into the dish, mix and grind with a blender.
- Carrot and onion caviar ready. Bon appetit!
