This dish was prepared by a woman with whom we, tourists, stayed overnight. She was so hospitable that she made us a hearty breakfast - these mind-blowing patties and vegetables. The local resident did not hide the intricacies of the recipe and shared it with pleasure.

How to prepare homemade cutlets



The ingredients
  • 400g beef brisket
  • 200g mutton
  • 100g onion
  • 1 tsp baking soda
  • 1 tsp lemon juice
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 100 ml of water


Preparation
  1. Combine soda and lemon juice in a small container.


  2. Mix in a bowl of minced meat from two types of meat and add quenched soda. Mix the mince for 10 minutes until it is viscous like dough.


  3. So that the mince does not stick to your hands, slowly pour water into it. Keep kneading the mince with your hands for another 10 minutes.


  4. Add olive oil to the mince and stir it for another 5 minutes.


  5. Wrap the mince in food film and send it to the refrigerator for a day.


  6. Grate the onions and squeeze the extra juice. Add grated garlic to the onion pulp.


  7. Take the mince out of the refrigerator and add onions with garlic, black pepper and salt to it.


  8. Mix the mince again and send it to the fridge for 2 hours.


  9. Prepare a bowl of water to wet your hands. Take the mince out of the fridge and start forming elongated cutlets.


  10. Roast the patties in the pan on both sides until ready. That's about 15 minutes.
