If you have a culinary thermometer, it is better to monitor the temperature, it should not exceed 150 degrees. Then put the steak on the board and let the syrup cool a little so that it stops boiling.
- To make sure the caramel is ready, drop a couple of drops into the icy water. The syrup should immediately curl up into a solid ball, which means that you can cast candy.
- Pour hot syrup with a tablespoon on the molds.
- The remaining caramel can be poured onto a silicone mat and make lollipops on a stick. Pour 1 tbsp caramel and place a stick in it. You can decorate lollipops with sugar sprinkle.
