What to do now to enjoy fresh okroshka in winter

Summer is in full swing, and with it the season of cold soups, the most favorite of which in our country is rightfully Okroshka. And in order to please their families with this wonderful dish with the smell of summer and in the cold season, we will need a vegetable preparation - okroshka for the winter.

In winter, it can be immediately sent to the pan without defrosting. 5 minutes - and the fragrant vegetable chip is ready. Everything is natural, and you do not need to run to the store and overpay there at an exorbitant cost.

Having read, on the advice of readers, the recipe for traditional okroshka from William Vasilyevich Pokhlebkin, we decided not to add radishes to the workpiece.

After all, a well-known connoisseur of Russian cooking wrote: In this okroshka there should be vegetables of two kinds: one neutral or fresh in taste, the other spicy and spicy.

Suitable for okroshka, firstly, boiled potatoes, turnips, carrots, trousers and fresh cucumbers. The spicy part should consist of finely sliced green onions (and onions prevail in this set), dill greens, parsley, kervel, celery, tarragon.

How to prepare Ingredients
  • 3 pieces of cucumber
  • 1 part green onion
  • dill

Preparation
  1. Wash the cucumbers under running water and trim their tips on both sides.
  2. Pokhlebkin advises to cut cucumbers (like other vegetables in okroshka) in small cubes. But you can do it at your own discretion. Cubes, straws or even rub on a large grater, like zucchini in a bag for the winter.

  3. Cut cucumbers put in a coop for about half an hour. This is necessary so that the glass is extra moisture and your workpiece does not turn into one lump of ice in the refrigerator.
  4. Wash the greens of dill, shake off the excess water and cut finely.

  5. Also do with green onion feathers.

  6. Now it remains to put all this in small containers or bags. 2-3 spoons of cucumbers, a spoonful of onions, a couple of pinches of dill. Here's the bombshell.

  7. Immediately send the boxes to the freezer, and in winter take out and enjoy the taste of summer. Bon appetit!
