Imperial omelet "Kaisershmarn", which looks inconspicuous, but sends the taster to the seventh sky

Today we have prepared for readers a dish with a strange and difficult to pronounce name. Kaiserschmarn is a sweet omelet first made at the court of Austrian Emperor Franz Joseph I.

  • 80g wheat flour
  • 2 eggs
  • 130 ml of milk

  • 2 tbsp raisins
  • 1 tsp powdered sugar

  • vanillin


Preparation
  1. Divide the eggs into proteins and yolks.


  2. Add a pinch of salt to the proteins and whip them with a mixer to steady peaks.


  3. Next, combine the yolks with a tablespoon of sugar. Add warm milk and vanillin. Whip until all the sugar grains dissolve.
  4. Pour the sifted flour and beat it to uniformity. Carefully, in several receptions, inject whipped proteins into the dough. Carefully stir with a silicone spatula so as not to precipitate the dough.
  5. Heat some of the butter in the pan. Pour the dough in the pan. Sprinkle raisins on top.


  6. Cover the lid and fry on a small heat for 7-8 minutes. The omelet should form a crust from below and almost grasp from above. At this point, it needs to be turned over and fried for another 3-4 minutes.
  7. Without removing from the pan, divide the browned Kaisersmarn into portion parts.
  8. Distribute the remaining sugar and oil over the pieces of the omelet. Fry for a couple more minutes, stirring constantly.
  9. Decorate the finished omelet with powdered sugar and berries.
  10. Serve it on the table with jam or honey.
