Noodles pea: Lenten recipe 1846
Pea noodles — a very old recipe, which is mentioned in "Domostroy". Is of interest primarily for fasting. The recipe was preserved in the later pre-revolutionary sources.
Ingredients:
1. Dry peas — 1 Cup (250ml). From peas to choose low-quality peas, place in a bowl, rinse several times, cover with cold water and leave for 6-8 hours (overnight). A bowl of soaked chick peas can be put in the refrigerator if you intend to cook in the morning.
2. Noodles – 1 Cup
Washed and soaked the peas place in a pot (better to take a volume of 3l), pour 4-5 cups of water, bring to boil and remove the foam, reduce the heat, add the whole onion, and cook until the complete cooking of the peas (the time depends on the peas and leaves from 1.5 to 3 hours). About 30 minutes until cooked peas, salt to taste.
When the peas are completely mushy, pull out his bow (to throw), to drain into a small pan of water in which the cooked peas, and the peas to wipe through a metal sieve, adding a little water.
Further, the thick shabby place in a thick-walled skillet or pan (cast iron or thick aluminum, it can be better if the pot is enameled), diluted pea broth in which the cooked peas. Density to adjust the amount of broth – you can make this soup thick or liquid.
Boil pea soup with grated peas, rectify salt, pepper, ground black pepper and add homemade noodles. Boil stirring just 3 minutes. Pea noodles are done.
The main thing to remember is that, RUB the peas through a sieve need while it is still hot or warm.
The amount of noodles was variable. Approximately 2 quarts of finished broth with the pea grounds is necessary to take 1 Cup dry homemade noodles.
The noodles can be pre-dried in the oven until Golden brown, some people find it delicious.
For a meatless option, the noodles should be cooked without eggs.
Conclusion: the taste is interesting, before the recipe "by ear" did not seem very... But the taste was good. Especially for those who are fasting, or not eating protein foods.
