Prepare natural candied ginger at home

Buy two big pieces of fresh ginger root (each 7-8 cm) – the fresher the ginger, the better, peel and cut into slices thickness of about 0.5 cm cover with cold water with a pinch of salt and simmer for 30 minutes. Rinse again and cover with water, simmer for 20 minutes. Repeat this operation two more times, each time adding a pinch of salt into fresh water. Then pour 4 cups of fresh water and add 1 Cup of sugar. Bring to the boil and simmer, uncovered on low heat until the syrup thickens, about 1.5 hours.





Lay out a parchment of some kind of flat container, pour a layer of sugar. Remove with a fork or tweezers slices of ginger and roll each in sugar, lay out on bars to dry for at least 1 hour. Then put candied ginger in an airtight container – where it will be stored for 2 – 3 months. You can add it to cakes and sweet rice, it is suitable as a snack with strong coffee in the East.
