Raw & vegan: Delicious strawberry-peach cobbler





Exquisite vegetarian raw food dessert that will not harm Your health and Your figure. Cake without baking, no refined sugar, gluten and dairy products — tasty and healthy!

Ingredients :

Cake:

1 Cup walnuts

1 Cup almonds

1 teaspoon coconut oil (melted)

A pinch of salt

4-5 dates

2 tablespoons of Chia seeds previously soaked in water

½ Cup grated coconut

Filling:

1 Cup raw cashew nuts

½ Cup walnuts

3-4 tablespoons pure maple syrup

1 tablespoon coconut oil (melted)

4-5 tablespoons water

A pinch of salt

A few drops of lemon juice

Top:

3-4 ripe peaches

5-6 pieces of strawberry





Walnuts, almonds and shredded coconut put in food processor and grind several times until the walnuts will not be crushed and mixed evenly with other ingredients.

Add dates, salt, coconut oil and Chia seeds and whisk until smooth.

A round piece of baking paper cover the bottom of the form for baking cakes with removable sides, evenly spread weight of cake, put in the refrigerator.

For the filling, soak the walnuts and cashews in water for at least two hours or over night.

Drain the water from the nuts and place into food processor with water, lemon, salt, coconut oil and maple syrup.

Beat for 3-4 minutes. You can add more water so that the mixture was more smooth.

Pour the filling into the base.

Half peaches thinly slice, spread on cake as shown in the pictures, leaving the middle empty

Cut off tops of strawberries and place it in the middle with

Refrigerate for 2-3 hours or leave overnight before serving.
