Marinated salmon with Oriental

- 150 g of water
- 100 ml of grape or Apple cider vinegar (fortress of no more than 7%)
- 100 g sugar
- 3 stars of star anise
- 6 buds of clove
- 6 peas allspice
- 10 peas of black pepper
- 1 tsp. salt
- 1 tbsp fresh ginger, finely chopped
- 3 heads of shallots or 1 small onion
