After 2-3 weeks of receiving preserved eggs, the protein which becomes smooth, elastic and gets a clear dark brown color, and the yolk turns to blue-black gelatinous substance. Fans of Chinese cuisine say that this is an incredibly tasty treat, especially when using it with a mixture of vinegar sauce, ground ginger and soy sauce.
