Revealed a secret berry that changes the taste of other foods
Japanese biologists have described the mechanism of protein miraculin that can turn sour food into sweet. A natural source of miraculin serve the berries of Synsepalum dulcificum, grows on the West coast of Africa. Taste, as such, they do not have, but the person who will, within a couple of hours will confuse the taste of sour foods and sweet.
In the study, experts reported that protein miraculin joins the gustatory receptor, which is responsible for perception of sweet. When the environment is normal, protein blocks its action, reduces the sensitivity to all used in the work of the substitutes. In acidic medium protein "collects" a couple of extra protons and changes shape. Which leads to a change of forms of the receptor, shifting the active phase and starts sending "sweet" signals.
Protein was opened in 1969 while studying Synsepalum dulcificum. In the 70-ies of the last century, the company Miralin developed dietary supplements, which was miraculin, which had to inject reduce the need for sweets. However, these developments failed.
