What our ancestors valued the tops

Our ancestors knew about the benefits of tops. It is used in traditional Russian dishes.

Tops cooked soups and borscht, made from cereal food, baked cakes, made desserts, and brew.

In the heat in Russia, our ancestors were treated beet soup from young beetroot leaves. The beet soup was considered a festive dish. It was served at Royal feasts.

In the old days Housewives harvested the tops for future use. It was dried or salted for the winter. Thus, in one ancient book read: "Young beetroot to cleanse, to wash, to fold in a tub, sprinkling lightly with salt, pour over bread, white brew, put in a cool place."

Carrot and beet tops – best base for soups.

Beet tops put in okroshka and cold beetroot soup.

The leaves are rich in ascorbic acid, which helps fight depression and strengthen the walls of blood vessels. It has a lot of folic acid, good for brain and nervous system. Greens contain b vitamins, iron, potassium, magnesium, calcium, iodine.



BEET GREENS

 

Great for salad. Beet tops are rich in fiber.

Before cooking it should be well washed, finely chop and pour boiling water. The leaves will become soft and tender.

Beet greens combined with tomatoes, celery, cucumber, lettuce, spinach, greens and nuts.

Salads should be dressed with vegetable oils cold-pressed from lemon juice or Apple cider, sour cream.

Tops can be added for preparation of the second dishes, in vegetable stews, meatballs, casseroles, omelets.

Beet greens can be a stuffing for pies.

The tops harvested in the following manner: it is dried, ferment, salt, canned with other vegetables and then, in the winter to use in cooking.

The use of beet leaves:

  • In cardiovascular diseases, diabetes, anemia, diseases of the thyroid gland.
  • Headache in the old days rubbed leaf beet into pulp, was applied to the forehead for 15 minutes.
  • Crushed leaf beet is applied to the eyelids conjunctivitis.
  • A decoction of the leaves of the beet helps in dealing with constipation: a tablespoon of leaves pour boiling water and insist to cool, for a day drink the whole glass in four stages.
  • Helps in the long-term healing wounds, chapped skin – apply the juice of leaves, pulp of them and decoction for washing wounds and compresses.
  • For illnesses and stop cracks with a decoction of the tops make the foot bath.
  • Activates the metabolism and blood formation, helps in the treatment of peptic ulcer, gastritis and liver disease.




THE TOPS OF RADISHES

 

The tops of radishes are rich in vitamins C, B1, B2, PP, potassium, calcium, phosphorus, iron, magnesium. It has a spicy flavor, delicate, pleasant.

The tops of radishes can be added to salads as greens, in soup or borsch.

It can also be dry, close to the banks finely chopped, sprinkled with salt and placed in the fridge for the winter.

In the leaves of radishes is more vitamin C than the root.

Radish stimulates the metabolism.

 

THE CARROT TOPS

 

Carrot tops add to soups, salads and casseroles, make the marinade for canning vegetables and even drinking tea.

Decoction of carrot tops our grandmother rinsed the hair for their active growth and strengthening.

Fresh carrot tops are bitter. To remove the bitterness pour over boiling water.





Carrot tops have long been used as a therapeutic agent:

  • Healing tea from hemorrhoids – pour 1 teaspoon of leaves (dried in a dark place) Cup boiling water and insist, drink a glass of therapeutic infusion in divided doses throughout the day.
  • Useful carrot tops cystitis – drink pure infusion of carrot tops or in equal proportions, mix it with the infusion of parsley.
