The cooking process:

Preheat the oven to 180 degrees. Roll out one sheet of puff pastry and place on a baking sheet covered with parchment. Spread the base biscuit with chocolate cream, not reaching the edges of 3 cm. For the filling and decoration:

  • 1 tbsp olive oil
  • 1 large leek,
  • 120 g of goat cheese,
  • 5 tbsp double cream,
  • 3 cloves garlic,
  • salt,
  • freshly ground black pepper,
  • flour,
  • 4 tbsp chopped dill,
  • 2 large potatoes,
  • 1 egg.
 

The cooking process:

Grind pistachios in a food processor or with a blender. Mix nuts with flour, salt, sugar and whisk well to combine the ingredients. Add butter and repeat the operation. While running processor, add the mixture in a thin stream 1/2 Cup of ice water. Knead until the dough is smooth. Transfer the dough on working surface and form a ball, wrap in cling film and leave in refrigerator at least 30 minutes.

Preheat the oven to 200 degrees. Heat a pan on medium heat, add 1 tbsp olive oil and chopped leeks (white part). Lightly fry the onion until it becomes transparent, and place it on the dish. In a separate bowl, mix goat cheese, cream, garlic. Add salt and pepper to taste.

  • 2 apples.
 

For the cream:

  • 50 g butter,
  • 50 g of sugar,
  • 1 egg,
  • 50 g almonds,
  • 150g custard (crème pâtissière).
 

The cooking process:

Softened butter, mix with sugar until the mixture is smooth. Add the ground almonds and mix well, then crack in the egg. Add to this mix the well chilled custard and stir to obtain a homogeneous mass.

Apples peel and cut into small cubes.

Preheat the oven to 180 degrees.

Baking sheet cover with parchment paper and place on first layer of dough. Wet the brush with water and brush the pastry edges (a strip about 5 cm wide).   • 1 tbsp milk,
  • 1 tsp of cognac
  • 1/2 pkg. baking powder,
  • 1 pinch of salt.
 

The cooking process:

Preheat the oven to 220 degrees. Sift the flour in a deep bowl, add baking powder and sugar. Mix well the dry ingredients.

In a bowl add chopped small cubes of softened butter, salt, cognac and egg. Carefully stir the dough until it becomes smooth and homogeneous.

Flat shape for baking grease with butter. Roll dough into circle and place on prepared sheet or pan. From top to grease the cake with a mixture of egg yolk and milk. Decorate the top of the biscuits with a fork and send in the preheated oven for about 20 minutes.

Serve it warm or cold.

 Biscuit without butter with almond cream



Preparation time: 35 minutes

Ingredients:

  • 2 packages of puff pastry (pâte feuilletée),
  • 180 g ground almonds,
  • 120 g of powdered sugar,
  • 20 ml thick cream (crème épaisse allégée),
  • 2 eggs + 1 yolk.
 

The cooking process:

Preheat the oven to 180 degrees. In a large bowl, whisk 2 eggs and powdered sugar. Add finely ground almonds and cream. Mix well the ingredients.

From one sheet of pastry to form a base and low walls of the pie. Fill the biscuit hazelnut cream and top with another piece of puff pastry. In the center make a small hole for evaporation of excess moisture.

Brush the biscuits lightly beaten egg yolk and send in the oven for 25-30 minutes.

Before serving, the cake is recommended to cool.
