Amazing salad with avocado, melon, fennel and mint

For 2 servings you will need:

• olive oil, 3 tablespoons
• white balsamic vinegar, 1 tablespoon
• freshly squeezed lemon juice, 1 tablespoon
• sea salt
• pepper

Salad

 

• ripe avocado, peeled and cut into thin slices — 1 piece
• a small bulb of fennel, very thinly sliced — 1 item
• little melon, cleaned from skin and cut into thin slices 1/2
• fresh mint leaves, small handful

​





For the dressing, combine the olive oil, vinegar and lemon juice, season with salt and pepper to taste.
