Beef kharcho soup Ingredients
  • 500 g of beef
  • 2 onions
  • 0.5 tbsp. rice
  • 4 cloves of garlic
  • 2 tbsp. l. tkemali sauce
  • 0.25 tbsp walnuts
  • a small bunch of dill, parsley and cilantro
  • 0.5 tsp ground coriander
  • 1 tsp hops-suneli or utskho-suneli
  • 0.5 tsp dry basil
  • 0.5 tsp red pepper
  • 2 tbsp. l. tomato paste
  • 3 tbsp. l. vegetable oil
  • salt to taste
  • 2 l of water


Preparation
  1. Cut the meat into several pieces. Pour in cold water, bring to a boil, remove the foam and cook over low heat for 1.5 hours.


  2. While the broth is cooking, pour over the rice with cold water.
  3. Dice the onion. Chop the greens, mince the walnuts.


  4. Pour vegetable oil into a hot skillet. Fry the onion on it for 10 minutes.
  5. Then dilute the tomato paste with a spoon of hot broth, add a little red pepper, tkemali sauce, stir and add to the onion.


  6. Carcass onions in tomato paste for another 5 minutes.


  7. Extract the meat from the finished broth, strain the broth through a sieve.


  8. Pour rice into strained broth. Add finely chopped meat. Cook for about 20 minutes.
  9. After 20 minutes, pour in the tomato dressing. Cook for another 5 minutes.


  10. Add nuts, bay leaves, herbs, garlic and utskho-suneli seasoning. Stir, cover and turn off after a minute.


  11. Be sure to let the kharcho brew for 15–20 minutes.
  12. Beef kharcho soup according to the recipe of Roxana Rubenovna Babayan turns out thick, rich and very tasty.
