  • 800 g flour

  • 40 g fresh yeast
  • 150 g butter
  • 3 eggs
  • 2 egg yolks

  • 150 g of dried apricots
  • 1 tsp nutmeg
  • 0.5 tsp. cardamom
  • 1 tbsp grated lemon or orange zest
  • 2 sachets of vanilla sugar


Cooking
  1. Mash the yeast with 2 tbsp sugar. Add to it 3-4 tablespoons of warm milk. This also add 2 tbsp flour, mix well. Leave the mass for about 15 minutes — until small bubbles on its surface.


  2. Requests 2 tbsp. flour in a bowl. Pour into the flour warm milk, mix well. Weight at this stage should be viscous! Add prepared yeast.
  3. Carefully stir the dough until smooth. Leave the dough to rise in a warm place for 1-2 hours.
  4. Whip eggs to a froth, add the yolks, stir everything and pour in the dough. Same here, add softened butter cut into pieces and sugar.
  5. Add 3 more cups flour, sugar and spices. Spices do not regret! For flavor you can add 2 tbsp of brandy or rum, this will give the cake a special taste.
  6. Well the dough is put on the delay for 2 hours in a warm place.
  7. Slice the candied fruits and dried fruits in small pieces. If you want to cook Christmas cake with dried fruits and nuts, it's time to add nuts, also cut into not very large. Steamed raisins — how appetizing it will be ready to test...


  8. Knead the dough again. Grease the form of oil, put in her dough and leave to rise in a warm for 1 hour. Bake the cake at 180 degrees for approximately 45-50 minutes.
