THE RECIPE FOR SPONGE CAKE WITH CHOCOLATE MOUSSE

Biscuit:

4 eggs
100 g sugar
80 g flour
20 g cocoa

Impregnation:
100 ml sugar syrup
50 ml cherry liqueur

Chocolate mousse:

170 g chocolate 53%
170 g chocolate 70%
200 g egg yolks
135 ml cream 33% fat
285 ml cream 35% fat content
5 g gelatin
100 g sugar
50 ml of water

How to cook sponge cake with chocolate mousse:

1. For the sponge add eggs and sugar beat with a mixer in a lush white mass, first at low speed, and after a couple of minutes to increase the speed. Turn off the mixer and gently (required in batch) to enter the flour and cocoa, stir the batter with a spatula.

2. Pour the batter on a baking sheet lined with parchment, and bake in a preheated 180°C oven for 20-30 minutes. Cool slightly and soak the cherry liqueur mixed with sugar syrup.
