A delightful spring soup with kohlrabi

Spring is near — and we still don't have cheerful green traditional spring soup? Corrected! This time the main ingredient of the soup will be kohlrabi. She confidently plays the first violin here, making soup is velvety and rich. The zucchini and the spinach adds brightness to its delicate light green color, and cream complete the composition.



for 4 servings:

  • 1 large onion
  • 1 large kohlrabi
  • 1 zucchini
  • 1 leek (white part)
  • 50 g spinach
  • 100 g of cream
  • 750 ml of water
  • 1 tbsp olive oil
  • salt, pepper
  • radishes, greens, croutons for filing
How to prepare:

Kohlrabi peel and cut into cubes.

Onion cut into cubes. Zucchini and leeks cut into slices.

In the frying pan, olive oil, stew the onions, kohlrabi, zucchini.

Put in a pot, cover with boiling water, season with salt and pepper, add leeks and cook over low heat for 20 minutes.

For a few minutes until cooked add the vegetables to the spinach. Remove from heat, add the cream to the soup, whisk in a blender until smooth. Warm the soup on the fire, without boiling.
