Healthy Breakfast: spicy lentils with yogurt

Spicy lentils with mangoIngredients (for 1 serving):

  • ½ Cup yogurt
  • ½ Cup finely chopped cucumber
  • 1 tablespoon cilantro
  • ¼ Teaspoon cumin
  • ¼ Teaspoon sea salt
  • 1 tablespoon fresh lemon juice
  • ¼ Cup cooked lentils
  • 3 tablespoons sliced mango
  • 1 tablespoon pine nuts
  • 1 teaspoon Chia seeds
  • a little olive oil




Preparation:

In a bowl mix all the ingredients with lemon juice. Add salt and pepper to taste. Enjoy!

To store, place lentils on the bottom. Top with yogurt, then mango, pine nuts and drizzle with olive oil.
