The Austrian scientists conducted a complex biochemical study of coffee to determine which of the many components of the tasty drink causes some coffee lovers heartburn. Indeed, in some cases, coffee can increase the level of acidity of the stomach that can cause heartburn. Austrian scientists from the University of Vienna (University of Vienna) decided to establish whether the technology of coffee brewing that will allow you to enjoy a drink without unpleasant consequences for those who have coffee causes heartburn. The experiment was conducted using living cells in the human stomach.

Scientists have been making coffee of various types of beans, different roasting (light roasting, medium, dark), using various methods (brewing "in the East" in cezve, espresso, Americano, "a French press" and so on). First, they were able to determine that coffee has several components, including, primarily caffeine, which increase the acidity of gastric juice. But then, to their surprise, the researchers found that the substance N-methylpyridin (N-methylpyridinium), also found in coffee, has the property to reduce acidity. This substance appears in the coffee beans in a dark roast (usually used for making coffee in espresso machines). "The value of our study lies in the fact that, thanks to him, was obtained scientific proof of the existence of the technology of preparation of coffee, which would have caused heartburn" – proudly commented the obtained results Professor Veronika Somoza (Somoza Veronika), who led the research team.
