Water - 1.5 cup
tomato juice - 1/2 cup
rice (basmati) - 1 cup
basil (dried) - 1 tsp
oregano (dried) - 1 tsp
artichokes (serdtsevinki, canned) - 420g
sweet red peppers (canned) - 200g
black olives - 1 jar (about 70g)
parsley, black pepper, salt - to taste
lemon juice - 2 tbsp
cheese (grated) - 2 tbsp
Stir in water, tomato juice, dry rice, basil, oregano and salt. Bring to a boil, reduce heat and simmer, covered for 15 minutes, until cooked rice.
Add rice artichokes, red peppers, olives, parsley, lemon juice and black pepper. Cook for about 5 minutes.
Put antipasti with rice on a plate and sprinkle with grated Parmesan cheese.
