A warming fall soup: 4 recipe

Pumpkin soup with apples and Pumpkin is the main autumn star. From September to November it is impossible to imagine a varied and balanced diet. If you don't know what to make of the pumpkin, except for the famous pie, we share a great recipe for pumpkin soup with apples.





Ingredients:

  • Pumpkin small 1 EA.
  • Apples 3 medium-sized pieces.
  • Ginger root grated 2 tbsp.
  • Cinnamon 1 tsp.
  • Butter 20 g
  • Salt and pepper to taste
  • Sour cream or low-fat cream to taste
  • The mixture of seeds and nuts to taste
 

Method of preparation:

1. Pumpkin peeled, cut in half, remove seeds, then cut into large cubes.

2. Apples to clear, cut in half, remove core, then cut into large cubes.

3. Melt in saucepan butter, add grated ginger and cinnamon. Mix thoroughly and then spread the pumpkin and apples. Sauté 5 minutes.

4. Next, add water to completely hide the ingredients, and cook on medium heat for 30 minutes.

5. Grind the soup in a blender until smooth texture. Season with salt and pepper. Before serving, add sour cream or low-fat cream, decorate with seeds.

 

Soup of turnips, carrots and potatoes with green onions
It is very nutritious and tasty dish. This soup will warm you in cold weather and will give a feeling of satiety and satisfaction.





Ingredients:

  • Green onions-450 g
  • Garlic 2 cloves
  • Carrots 300 g
  • Celery 1 stalk
  • Turnips 1-2 PCs
  • Potatoes 450 g
  • Bay leaf
  • Thyme
  • Parsley
  • Salt
  • Ground black pepper
  • Sour cream ¼ Cup
  • Tarragon for filing
 

Method of preparation:

1. In a large saucepan, combine chopped green onions, chopped garlic, carrots, celery, turnips, potatoes, Bay leaf, thyme, and parsley. Add 1.5−2 liters of water. Add salt, pepper. Put on the fire.

2. Bring to a boil, reduce heat, cover and simmer for 40-45 minutes, until the vegetables are very soft.

3. Pour soup into blender and blend until smooth or use immersion blender.

4. Pour the soup back into the pot and add sour cream. Stir.

5. Warm over medium heat. Season to taste.

6. Before serving, garnish with chopped tarragon.

 Carrot soup with ginger

Carrots and ginger are an original and unusual combination. Don't know where to use it? Suggest to prepare the spicy cream soup.





Ingredients:

  • Olive oil to taste
  • Onions 1 PC.
  • Garlic 2 cloves
  • Grated ginger 2 tsp.
  • Ground cumin 2 tsp.
  • Sweet potato 500 g
  • Carrots 4 pieces
  • Vegetable broth 1 l
  • Natural yoghurt 130g
  • Chopped green onions, for submission
 

Method of preparation:

1. Heat a large pan on medium heat. Drizzle with olive oil.

2. Add chopped onion and cook, stirring, for 5 minutes or until soft.

3. Add the garlic, ginger and cumin. Cook, stirring, for 1-2 minutes.

4. Add sweet potatoes, diced, grated carrot and broth. Increase the heat to maximum. Bring to a boil.

5. Cover and reduce heat to low. Simmer for 15-20 minutes or until the vegetables are soft. Set aside to cool slightly.

6. Pour the soup into a blender and blend until smooth.

7. Pour the soup back into the pot and warm over low heat.

8. Ladle the soup cups. Garnish with yogurt and chives. Serve.

 

Potato cream soup with green onions

The potato remains one of the most popular products in our country. It is possible to prepare a lot of different dishes, but few people opted for cream of potato soups. We offer you to correct this unfortunate mistake.





Ingredients:

  • Butter 20 g
  • Green onions
  • Onions 1 PC.
  • Celery 2 stalks
  • Potato 2 PCs.
  • Vegetable broth 5 cups
  • Cream 125 ml
  • Sour cream for filing
  • Bread for feeding
 

Method of preparation:

1. Heat the oil in a large saucepan over medium heat.

2. Add chopped leeks, chopped onions and celery, and also potatoes, diced. Cook, stirring, for 5 minutes.

3. Pour in the broth and cream. Bring to a boil.

4. Reduce the heat to low. Cook over low heat, stirring occasionally, for 25 minutes. Let cool for 10 minutes.

5. Whisk the soup with a blender.

6. Ladle the soup cups. Add sour cream, chopped green onions.

7. Serve with bread.
