Coffee cupcake with walnuts

This is a classic that will never go out of fashion. This cake is perfect for afternoon tea... Especially if you cover it with a soft caramel!

What you need:

2 tbsp. butter
2 tsp granulated instant coffee
1 tbsp boiling water
1 medium egg
1 tsp vanilla extract
3 tbsp brown sugar
4 tbsp self-raising flour (4 tbsp plain flour + 1/3 teaspoon baking powder)
1 pinch of salt
1 tbsp roughly chopped walnuts

Cream:
2 tbsp of cream 30% fat (you can substitute mascarpone)
0,5 tbsp caramel syrup
half walnut kernel

How to make coffee cake with walnuts:

1. Boil instant coffee with boiling water and cool slightly.

2. Put the butter in the mug with a volume of 350 ml and heat in the microwave for 10-20 seconds, until melted. Add coffee, egg, vanilla and sugar. Whisk the mixture with a fork or whisk. Stir in the flour and salt and again whisk the batter until smooth, then gently stir in the nuts.

3. Bake in microwave oven 2 minutes at a power of 600W, 1 minute 45 seconds at 800W or 1 minute 30 seconds at 1000 watts. Allow the cake to cool.

4. For the cream whip the cream with a whisk until soft peaks form, enter the caramel syrup and spoon over the cooled cake. On top decorate with halves of walnut.

Banana cupcake

Juicy and sweet – it must be the banana cupcake. If you have overlooked a lone blackened banana is a sign of destiny!

What you need:

1 ripe banana (about 100 g)
1 tbsp vegetable oil
1 medium egg
1 tbsp low-fat milk (1,5–2,5%)
4 tbsp cane sugar
4 tbsp self-raising flour
1 pinch of salt

1 tbsp coarsely chopped pecans (feel free to replace the walnuts)
1 tbsp light raisins

Cream:
2 tbsp cream cheese
1 tbsp powdered sugar
1 tsp lemon juice
1/4 tsp cinnamon

How to cook banana cupcake:

1. Mug capacity 350 ml crush them with a fork 3/4 of the banana (the rest will be needed later). Add butter, egg, milk and whisk the mixture until smooth. Stir in the sugar, flour, salt and cinnamon, whisk thoroughly. Gently stir in nuts and raisins.

2. Bake in microwave oven 3 minutes 20 seconds at 1000 watts. The finished cake let cool.

3. For the cream mix the cream cheese with the icing sugar and lemon juice, whisk the mixture with a fork or whisk until it becomes light and airy. Put cream in pastry bag with nozzle "star". Squeeze the cream at an angle of 45 degrees, then decorate the cake with slices of remaining banana and sprinkle ground cinnamon. Serve immediately.

40 g of small pieces of dark chocolate
1 medium egg
2 tbsp low-fat milk (1,5–2,5%)
3 tbsp. sugar
3 tbsp self-raising flour
1 pinch of salt
1 tbsp cherry jam or marmalade

Cream:
50 ml cream 30% fat
1 tbsp cherry jam or marmalade
10 g dark chocolate
1 fresh cherry

How to cook cake "Black forest":

1. Put the butter and chocolate in a Cup with a volume of 350 ml and heat in the microwave for 10-20 seconds until they are melted. Add the egg and milk and whisk the mixture with a fork or whisk until smooth. Stir in sugar, salt and flour. Again beat well. Then add to the dough cherry jam or marmalade.

2. Bake in microwave oven 2 minutes at a power of 600W, 1 minute 45 seconds at 800W or 1 minute 30 seconds at 1000 watts. The finished cake let cool.

4 tbsp self-raising flour
1 tsp cinnamon
3 tbsp grated Apple

Decoration:
1 tbsp caramel sauce
1/4 tsp. dark brown cane sugar
ice cream – optional

How to cook Apple pie with Apple and cinnamon:

1. Grease a mug with a volume of 350 ml, then lay on the bottom of the Apple slices.

2. 2 tbsp. butter put into another mug and heat it in the microwave for 10-20 seconds, until melted. Add the egg, milk and vanilla, whisk thoroughly with a fork or whisk. Stir in the sugar, flour, salt and cinnamon, whisk again with a fork until smooth. Stir in to the dough grated Apple and gently pour in a mug with Apple slices.

3. Bake in the microwave for 2 minutes 20 seconds at a power of 600 W, 2 min at 800W or 1 minute 40 seconds at 1000 watts. Let the cupcake cool slightly.

4. Carefully place the pie on a dish. Pour the caramel sauce, sprinkle with cane sugar. Can be served with ice cream.

 

Honey cake, or "cake" in a mug To prepare this dessert will require extra effort, but when your best friend will see bees busily decorating it, you will understand: time well spent.

0.5 tsp. vanilla extract (you can substitute vanilla sugar)

4 tbsp powdered sugar
1 pinch of cinnamon
30 g yellow marzipan
black food coloring
a few almonds
1 tsp liquid honey

How to make cake in a mug:

1. Put the butter in the mug with a volume of 350 ml and heat in the microwave for 10-20 seconds until it melts. Add the egg, honey and vanilla, whisk with a fork or whisk. Stir in sugar, salt and flour, blend again until smooth.

2. Bake in the microwave for 1 minute 45 seconds at a power of 600 W, 1 minute 30 seconds at 800W or 1 minute 15 seconds at 1000 watts. Allow it to cool.

2. To decorate, divide the marzipan in two and roll with the fingers of each piece to size and shaped like a bee. Dip a toothpick or a thin brush in food coloring and draw bee stripes and eyes. Almond make wings. One bee push the cocktail stick or toothpick.
