Italian Caprice: Capri, mafia, almonds and chocolate

Are you confused about the title? You are probably used that on a whim, caprese or Caprese salad, in Italy called the starter of ripe tomatoes with mozzarella cheese and green leaves fragrant fresh Basil? But not only! And, it would seem, and here the mafia, almonds, and chocolate?.. All in good time!

First of all, the Caprese salad is also a wonderful chocolate almond cake, very simple to prepare, but very tasty!

Its poetic name, this dessert is bound to the island of Capri, a true corner of Paradise in Italy. This recipe for chocolate-almond cake is sure to be on taste and to patients with celiac disease, because there is flour used ground almonds.





But the origins of this fantastic cake has to... an unfortunate misstep pastry!

It is told that in 1920 in the private confectionery on the island of Capri chef named Carmine di Fiore conjured dessert of almonds for just anyone, but for three of the mafia, arrived at a beautiful Italian island to buy leggings in the style of al Capone. Apparently, the excitement, the pastry chef forgot to add in the cake's reliance on prescription amount of flour and and sent the cake in the oven, not noticing the error. Only then, when he pulled the fragrant cake from the oven, he was amazed how wonderful it turned out without flour: a delicious crispy crust on the edges and soft and chewy "heart"!

So, you will need:

  • 150 g dark chocolate
  • 200 g butter
  • 200 g granulated sugar
  • 200 g unpeeled almonds
  • 6 eggs
  • 1 sachet of baking powder
 

Recipe:

Melt in a saucepan on low heat butter and chocolate. Separate the whites from the yolks.

In a bowl, with a mixer as it should stir the yolks and sugar, then add in flour, ground almonds and baking powder and again stir it well with a mixer at low speed.

Add the melted chocolate and butter, stir.

Separately in a bowl, whisk until a thick foam proteins with a pinch of salt. Gently, stirring from the bottom up, fold in the beaten egg whites into chocolate-almond mass.

Grease with butter a baking dish. Pour it in the batter and place in a preheated 160-170 degrees oven for about 50-60 minutes.

When the cake is ready, turn off the oven and allow the cake to cool inside before removing it from the form. Cooled down, the cake will fall a little — as it should be.

Serve, sprinkle cake with powdered sugar.published
