Vegan spicy curry with potatoes

Ingredients:

  • New potatoes — 300 g
  • Curry paste — 2 tbsp
  • Onion — 1 piece
  • Garlic — 3 PCs
  • Garam masala — to taste
  • Cumin — to taste
  • Turmeric — to taste
  • Curry — to taste
  • Fresh ginger — 2 teaspoons
  • Chili powder — to taste
  • Tomato paste — 1 tbsp
  • Sugar — 2 tsp
  • Chickpeas — 0,5 Cup
  • Coconut milk — 1 Cup
  • Starch — 2 tsp


Preparation: the chickpeas soak overnight. Then rinse and boil until soft in salted water. Potatoes wash and coarsely chop right in the skin. Fry in a pan, until a dense Golden brown. Put potatoes, peas, curry paste (or 1 tbsp curry powder), crushed garlic clove, cumin, turmeric in a saucepan. Pour the coconut milk, bring to boil, add water. Then reduce the heat and cook on low heat for about 15 minutes. Add salt, pepper, tomato paste, sugar and finely chopped onions.

If necessary, add coconut milk or water. Stir, bring to boil, reduce the heat and simmer until cooked peas. published
