Crispy strips of chickpea flour

Fried products made from steamed chickpea flour common in the South of France and in Southern Italy, namely in Sicily, even in India and Pakistan they are. Are they just different names, sometimes different shapes, but the process of cooking always the same.

This product I like much more than boiled, then roasted pea nut. But these sticks if you want to make a small rectangle, or shape into patties, even hearts cut out (cookie cutter), they are quite different in consistency and taste. And if we dip to prepare, then have a very interesting appetizer turns.

 





 

Ingredients:

4-5 servings
  • 1 tbsp olive oil
  • 15 grams of butter
  • 500 ml of water
  • 125 grams chickpea flour
In addition:
  • Olive oil for frying
  • Grated Parmesan cheese, for topping
For the sauce:
  • 200 ml of yogurt
  • 2 cloves garlic, squeeze
  • 1/2 bunch of dill, finely chopped
  • peel the 1st lemon, minced
Freezing gram mass: 3 hours

Cooking time: 20 minutes

 

Preparation:

1) Water with olive oil and butter bring to a boil, remove from heat and let cool slightly. To enter, stirring constantly with a whisk gram flour. Mix well until smooth to avoid lumps.

 

2) Return the weight on a medium heat and cook, stirring, already with a wooden spoon, until the complete curing of the mass.

 

3) cake pan, or any other small, rectangular or square shape, brush with olive oil and pour in the gram weight. Let cool slightly and refrigerate for a few hours. The mass needs to fully harden.

 

4) Remove the solidified mass from the fridge cut into sticks of the desired size with a thickness of about thumb.

 

5) In skillet, heat olive oil, put portions gram sticks and fry until Golden brown on all sides.

Spread sticks on a plate covered with paper towel to stack excess fat.

 

5) Mix all the ingredients for the sauce. Serve sticks hot with sauce or without, sprinkle, if desired, with grated Parmesan cheese.

Can also be served as a side dish to fish.
